He is followed by Sous Chef or Deputy Chef who shares major responsibilities with the head chef. Just below him is Chef de Partie or Station Chef who is an important part of the brigade system and carries out multiple different roles. A large kitchen usually has numerous chef de partie, each
responsible for a different kitchen section. Their roles include Sauté Chef/Saucier or Sauce chef, who sautés foods and creates sauces and gravies. The Boucher or Butcher Chef prepares meat and poultry. Poissonnier or Fish Chef prepares fish and seafood. Rotisseur or Roast Chef roasts meats and appropriate sauces. Friturier or Fry Chef prepares fried food. The Grillardin or Grill Chef is the king of grilled items. Garde Manger or Pantry Chef is in charge of cold dish preparations like salads. Pattisier or Pastry Chef is an expert in baked food, pastries, and desserts. Entremetier or Vegetable Chef prepares vegetables, soups, starches, and eggs.
